Vegan Scottish Empire Biscuits

Empire biscuits are a big favourite in the UK, particularly in Scotland. They are 2 (usually) shortbread biscuits that are sandwiched together with jam and topped with water icing and either a glace cherry or a jelly tot (gumdrop).So I searched for vegan empire biscuits for another testing vegan recipes post, but I couldn’t find any, or at least one i was happy to attempt, instead I used a recipe from … and veganise it to share with you all today.

Revamping Last Nights Dinner – Delicious Vegan Rice Balls !

This is probably my favourite thing I’ve made as a Vegan. Last night I made vegetable paella and it was really nice and I enjoyed it very much, but being the only Vegan in my household a lot of the things I make are just for me because no one else will eat it. I made enough paella for about 4-6 people and it was going to go to waste because let’s face it, there’s only so much rice a girl can take … if I was to eat it all myself it would take like 2 days or something.

Testing Vegan Recipes – Chewy Chocolate Chip Cookies.

Anyway back to this post .

I recently tried this amazing recipe from http://www.atiliay.com called The Best Chewy Chocolate Chip Cookies Ever! And they were pretty damn good ! I made a few changes – as I always seem to do for some reason – I wouldn’t say they were necessary but I did anyway.

I wasn’t able to get photos of making the cookie dough as my phone died at the time sorry guys !

Testing Vegan Recipes : Chocolate Mocha Cupcakes!

So today I thought to myself, I haven’t baked in sooo long like literally a month (I think it’s because I’m vegan now ), and that is so unusual for me because I used to bake all the time. So I had a look online for some Vegan dessert recipes and I found one on the Vegan Society called Mocha Chocolate Cake.
Method:

Preheat oven to 200C/400F/gas mark 6.
Sift flour into a basin with the cocoa powder, bicarbonate of soda, cream of tartar and sugar, and then mix together. Stir in the water…
